I have a weakness for sweets. I often wish I didn’t, or at least wish that I was better at self discipline and moderation. Because of this, I’m always looking for ways to fill those sweet cravings without all the junk that normally goes along with it. I came across this recipe on Pinterest while doing my weekly meal planning and thought it would offer the perfect snack solution. It’s also really simple: slice some apples (I used honeycrisp), add some cinnamon (and a little sugar if you prefer, although these apples were plenty sweet enough), and bake them in the oven at 200º until they’re done. Easy peasy. I try to limit how much oil we use in our house and love anything that makes for an easy clean up, so I baked them on parchment paper. Liam even “helped” me with slicing the apples by eating anything that didn’t pass inspection. The finished product is completely toddler friendly too. Eating them warm from the oven was almost good enough to convince me I was eating an apple-spiced cookie. Almost. 😉
I love that this is a fun, healthy treat that’s gluten-free and vegan. It even pairs well with a glass of cold almond milk. Yum!
